Here at Delish, we take any opportunity to base a meal around one of our favorite ingredients: noodles. Ramen noodles, spaghetti, udon noodles, soba, it makes our heads spin! The options are truly endless. Rice noodles top the favorite noodle list and are a constant favorite: With just the right chewy toothsomeness, they hold sauce incredibly well and (bonus!) they’re naturally gluten free.
Whether you’re making curries, stir-fries, or soups, rice noodles are a great hearty addition to any meal. Your first stop? Cooking rice noodles can be confusing, though; every package seems to have different instructions. Some call for boiling and others for soaking the noodles in hot or room temperature water. Be sure to check the instructions on the packaging beforehand. Whatever route you take, you can rinse the cooked noodles under cold water to remove excess starch, and coat them in a little neutral cooking oil if you don’t plan to use them right away. If the noodles do clump, just rinse them under cool water and drain right before using; they should easily come apart.
Whether you choose a Thai fried noodle or Vietnamese feast, try some favorites to accompany your meal. Thai iced tea and mango sticky rice are the perfect end to a Thai-inspired meal, and you might never drink regular iced coffee again when you try a Vietnamese iced coffee. Sub in sweetened condensed milk, and you will be transported.
